5 Easy Lunches for Work & School

Need well-balanced lunches that you can put together in the snap of a finger?

With more people settling back into office settings, and kiddos back in school, packed lunches are likely back in the rotation for many of you. Often times, we find school and work lunches from home are put together quickly and don’t contain the best balance of nutrients (i.e. just grabbing a fruit, throwing in some chips or crackers, maybe a string cheese and some type of dessert). Keeping in mind refrigeration and heating restrictions that come along with bringing lunch from home, here are 5 easy, well-balanced lunches that you can put together in the snap of a finger!

  1. Bagged salad kit topped with chopped deli meat and a serving of fruit on the side. Note: using the nuts, seeds, dried fruit and other topping in the salad kit helps to bring some fat into the meal, but you may be better off using only half of the dressing to keep calories and grams of fat in check.

  2. Bento box lunch with hard boiled eggs, a serving of whole grain crackers, fruit, and veggies with hummus.

  3. Make a large batch of pasta salad to portion out throughout the week. Use a bean-based pasta that is higher in protein, add in your favorite Italian dressing along with veggies of choice, like cherry tomatoes, spinach and diced bell pepper, and top with a sprinkle of cheese.

  4. Combine canned tuna or pre-shredded chicken with a 100-calorie pack of guacamole and seasoning of choice to make a “salad”. Serve over whole grain crackers with fruit on the side. Note: you can add diced veggies, like celery and bell pepper to the tuna/chicken salad, and create different flavor profiles with ingredients like mustard, pickles and hot sauce.

  5. Another “snacky” style lunch using pre-steamed edamame pods, an apple with nut butter, and air-popped popcorn.
